My gold fish tank keeps going alkaline, why would this happen?

There could be something in your substrate or ornaments that is raising the pH eg. coral sand or chips, seashells, limestone etc, mainly stuff that contains calcium carbonate. You can test by dropping some acid like vinegar on the item, if it fizzes it's likely the culprit.
